Introduction
Hawaiian Bros is an award-winning, and rapidly expanding restaurant concept serving island-inspired plate lunch meals. Opening their first location in 2017, Katalyst has partnered with Hawaiian Bros for years on a variety of engagements to fuel their expansion and improve the results.
Service Design
Highlights of some recent engagements are listed below.

In-Restaurant Service Time: Long ordering queues and slow kitchen delivery led to crowded and unappealing lobbies. Through streamlining the kitchen operations, upending the traditional queue/order process and modifying the directional flow for customers the average transaction time was reduced from more than 10 minutes to less than 2 minutes.

Staffing Efficiencies: As with many brands, retail staffing has been a challenge. Through menu education in the lobby and an order taking strategy improvement, Hawaiian Bros was able to reduce front of house staff required to operate by 33%.

Supply Cost Reduction: Katalyst has worked on a variety of consumer and employee supply cost reduction strategies, including one project that reduced overall expenses by more than 2% through implementing new bag dispensers in the kitchen processing lines.

Pick Up & Third Party Deliveries: Through site analysis and development, Katalyst was able to locate the best placement for food storage prior to pickup and customer parking signage resulting in faster order pick-ups by 17% and reduced employee foot traffic by more than a mile per shift.
